Strawberry cream Supreme

To celebrate strawberry season and Wimbledon we decided to share a very easy dessert that is perfectly easy to make and enjoy on a summer evening. We got the children to help us make this with us this week and they loved it.

You will need

Trifle sponges (enough to cover the base of your dish)

500g strawberries (save a few for the top)

2 tablespoons sugar

300ml whipped cream (with a drop of vanilla essence)

A glass dish works nicely as it shows off the layers


Liquidise the strawberries with the sugar in a blender

Place the sponges on the base of the dish and pour over the milk to soak the sponges

Now pour the strawberry mixture over the sponges and leave it in the fridge for a few hours (or overnight if preferred) to soak into the sponge.

Whip the cream with a few drops of vanilla essence so that it is firm but not too stiff (you want to be able to spread it thickly over the strawberry mixture.  Once at desired consistency spread it over the strawberry layer.

Slice up the remaining strawberries and decorate the top.

Best served chilled from the fridge.
